RecoveryGuard is a small tweak app available in Cydia for free which prevents automatically updating your jailbroken and unlocked iPhone, iPad or iPod touch to latest firmware when connected to iTunes.
The working of this app is simple, once you've installed this tweak app on your jailbroken iOS device, it makes iTunes to think that the iOS device is already up-to-date and have latest version of iOS firmware, hence preventing it from any updates.
According to the developer of this tweak app:
This package blocks iTunes from being able to put your device in Recovery mode. This prevents normal upgrades & restores, for example accidentally clicking Upgrade or Restore in iTunes. It also makes iTunes think your device is always up to-date.
Note: You can still restore your device by using standard recovery (home button on power on) or DFU mode recovery. Of course you can also uninstall this package to restore normal iTunes operations.

To download and install this app on your iPhone/iPad/iPod touch, first you must need to jailbreak it on either iOS 4.1 or iOS 4.2.1.
